I usually just freeze it and they have it on another night and never know it is leftover from a previous time.(whatever works right?)<BR/>I was reading your momma's comment and I have done the same thing as her with leftover chili.... cept, I bake a thin pan of cornbread and just before it is done I add some heated up chili on top with some grated cheese and finish off in the oven. I top with chopped green onions and sour cream and cut into pizza slices. mehican pizza baby!<BR/>It is also good with some whole kernel corn mixed in and cooked shell pasta topped with grated cheese. I have to find the balance between Glen who can eat ANYTHING and EVERYTHING, to myself, who sees food and gains weight! Its a compromise but we've come to a happy medium. I don't deprive myself, but moderation is key. There are some things I just won't eat. We have some frozen chili still from the last time he made a pot...ugh! Glad Austin is doing well. I get tired of it, too. I like to freeze it and then pull it out for a quick meal on the weekends. One thing with leftover chili I like to do is make a chili-bake . . . grease a casserole dish, put in the chili, top with cheese, then mix 1-2 boxes of the small blue-box (Jiffy?) cornbread mix and spread on top. Bake until the cornbread is done. Yum, yum . . . don't know what it is about the Jiffy cornbread and chili, but it sure is good! Kinda reminds me of the chili and frito's we used to have at basketball/football games at school ~ remember that? Glad you are following up with the doctor next week. Take care of yourself!
