I'm not a great cook... I prefer things that I can stick in a microwave or a crock pot or the oven. If it requires lots of preparation or constant supervision - forget it. So this was an experiement for me....
I halved a butternut squash and put it into a baking dish. Actually... I bought it halved already... I just scooped out the seeds and trimmed it to fit my little casserole. I drizzled a little olive oil and honey over it... I sprinkled with nutmeg... and I covered it and baked it for about an hour. When I could smell it (my cue for anything being done)... I took it out, added blackberries and stuck it back in the oven, uncovered.
I'm serving the squash / blackberry combo with a half cup of fat free greek yogurt.
I'm told that a serving of fruit and veggies is the size of your closed fist. So... this would equal 2-3 servings... and a serving of protein... and a serving of dairy... it seems like a pretty healthy breakfast to me! Maybe adding a grain would be good too.... I'll puzzle over that for a bit.
